Hello VJ,

I am going to Ghana in January for 10 days and decided to go in November for Thanksgiving for another 10 days. Can I apply for a single entry visa each trip or a multiple entry visa for each??

Apply for a multiple entry visa. I believe it's good for two years and will save you a lot of money. I finally got one on my third trip and used is three times.

Its true single entry visa is valid for 3months and multiple is valid for 5years.  But in the future you might use it again so to save the hassle and money, I will recommend the multiple entry which is good for 5years.
