My Wife Recently Got her Visa Approved, Looking Ideas and Documents that would be great when we ROC. I know it's in two years but it's best to be prepared and collect all the documents when we have time.

I don't think it mentions wills or power of attorney naming each of you to the other, both of which are valuable evidence to include. It also says evidence of joint bank accounts but to be more specific, I would suggest you include (at least) quarterly bank statements from throughout the 2 years showing your actual banking history and that you use the account together, not just a piece of paper that says you both have an account in your names together. 

 

You're smart to start amassing evidence now so it will be less overwhelming later. When determining whether something would be good evidence, ask yourself, "Does this show proof of the ongoing co-mingling of our finances and the ongoing nature of our relationship?" Key word being "ongoing"...make sure your proof spans across time.
