So I got my interview letter for San Antonio today! And now I have some questions.

 

First, it's a "Request for applicant to appear for initial interview" - is this usual? I feel like this implies there are multiple interviews expected for me? Is this any sort of red flag?

 

For "Government issued identification" - can I use my EAD? Or will I need to bring a driving license? Or can I use my UK passport?

 

What documentation can I bring to establish my eligibility for Lawful Permanent Resident status?

Your passport works.

 

You are applying based on marriage to a US citizen, so prove you are married to a USC.

Marriage certificate

Maybe a photo from the wedding day.

Anything you have established jointly as spouses-bank account, leases, mortgages, insurance, beneficiary status on 401k, health insurance, Utilities 

Anything that shows you at same address...driver licenses, mail, bills

There can be multiple interviews if the IO decides, but that is usually fairly rare.  As to what to bring, bring anything that establishes your marriage.  The list Wuozopo gave is good, so I won't repeat it.  I would also bring copies of both your K1 and AOS submissions just in case USCIS misplaced a document.
