My fiance and I just got our application approved by the USCIS and the application has been sent to the NVC.  I have documents that I believe will help our case and I want to send it to the NVC before the application is sent to the embassy abroad. Does the NVC receive supporting documents for fiance visa?  Has anyone tried to send supplementary information at this stage?

No, your only chance of adding more documents/proof is at the interview. Send everything needed to the beneficiary so s/he can bring it.

K-1 files barely touch the NVC. They arrive, are assigned a case number and then sent to the embassy. They don't do anything else with them there and they are only there a matter of days and barely leave the mail room. You aren't paying any fees to the NVC so they won't "work on" your case. Bring whatever you feel supports your case to the interview.

POE: December 19, 2016 Las Vegas

Oath: March 22, 2021 COVID-style same-day oath

 

Now a US citizen!
