Hi, I am also a bit concern about this part of the visa process. I don't make nearly enough as I am Peace Corps Volunteer.

My mom will be co-sponsoring, but I am not sure if I should have 2 co sponsors. She is self-employed and has her own business. Her gross income is 24,000 for 4 people. but has assets such as her house and business, cars, etc... Should I still look for another sponsor?

Sponsoring can be confusing.  For an single immigrant  the petitioner is the primary sponsor.  If they live with a person that is also working those people can combine income .   Each immigrant can use one secondary sponsor , who can also combine income with people they live with.   A family of immigrants can be split between 2 secondary sponsors. ( say 5 people are arriving , one can do 3 and the other the remaining 2 )   Somewhere in that mess there has to be an affidavit of support that covers the required income level for the sponsors household, any previous immigrants they are still on the hook for and all the new immigrants they are signing up for .

This will not be over quickly. You will not enjoy this.
