I've been on a working holiday visa in Australia for the past year working as a nanny. I haven't filed taxes because my work is cash in hand and I'm a bad person.

Anyways, I know that I will have to have a joint sponsor for my fiancé's affidavit of support. I have two joint sponsors who make well above the 125%.

I have to fill out an affidavit of support, but my question is, would it be wise to say I'm unemployed (there is no evidence that I am working or earning money.) or should I state that I am self employed as a nanny and admit to not filing taxes and use bank statements as evidence rather than tax statements?

Thanks in advance for your advice.

(Filing taxes simply isn't an option because we don't have time to file taxes in Australia and America and get a tax return before the affidavit of support is required)

I suggest you do file taxes, and you still have time to file them. The tax return return form which you can use for financial support and if you don't make enough then you can use a sponsor. I would not be surprised if your fiance grilled with questions by the CO at the interview. Not only that, its the law to file taxes even if you are living abroad. Also, if your fiance is asked about you being working and where then the truth have to be told.

For I-134 you only use one person as a joint sponsor. With the I-864 incomes can be combined.

Choose a joint sponsor that can meet the income requirement for their household plus the intending immigrant on their own.
