For the sake of clarity, you should likely spell it out, rather than use a somewhat obtuse acronym.

Could we use "OOS" if visa has expired in field for Current Status on I-485 and I-765?

Depends on which visa you are adjusting from. :time: For a K-1 visa, we put the current USCIS status as "K-1" since the K-1 visa expires once it is used and your authorized stay is dependent on the I-94's expiration date, but you can file the AOS anytime. You are only required to get married within 90 days of entry. Now if it is another visa like a F2, tourist or student visa, you need to have an approval notice giving you an immigrant visa number, so are you really out of status?
