I have one photocopy of MY wife's W2 and IRS of my Joint sponser. So at the time of interview they required one photocopy or two?

Second Question I have taken screenshots of latest whatsapp , viber, skype else of conversation b/w me and my wife. and did Black and white print copy, so color copy is nessesory or black is fine?

Depends on the embassy/consulate but doubt you need more than one. I only needed one copy (Amsterdam, NL). Also, black and white print-outs are fine, you don't need color as long as the text is legible.

your question is confusing Do you mean your wife is your joint sponsor also? you need tax returns with w-2s. Also if your joint sponsor file his /her taxes married jointly then he/she need w-2s with tax transcript. Please clarify your question.
