I have received my NOA2 back in November, and received an invitation to schedule an interview from the Yerevan Embassy in December. At the time, however, I was unable to provide a complete I-134 because I am a full-time student finishing my last year of university, and so have no income to show proof of financial support.

However, I have recently been offered a full-time job with a 75k salary. I am planning to accept, but I won't be starting the job until sometime in July (after I graduate). Would I providing the job offer letter (on paper with official company header, stating the salary, nature of employment, salary, and start date) with the I-134 be sufficient proof of financial support? Or will I still require a co-sponsor?

Additionally, my NOA2 states it will expire Feb 20. Does this mean I need to schedule an interview before Feb 20?

You should find a joint sponsor after making sure your embassy accepts them. Keep in mind your situation is pretty common so they have seen this before.

Your future job wont be a factor because there is zero income.

I suggest you submit a 6 month plan indicating how you will begin life as a couple as far as budget & funding sources.

Don't worry about the expiration date if it passes they will extend it.

Regarding the extension past the expiration date- how long will it be extended for? Will it just repeatedly be extended until an interview is scheduled? Or should I be scheduling an interview now?

USCIS knows they are the reason for the delay so the extension is for the period needed to complete the case.

Future income will not do. You need current income and actual pay stub. Since this is a new job, I also recomment a letter from their payroll department setting forth that you were just hired and you are paid X dollars every week/month/whatever.
