My fiance is wondering if it would be possible for him to keep his job in Canada (but we would live in the states) once the K1 Visa is approved? I've seen a lot of posts on the Canadian immigration sites discussing partners living in one country but working in the other, and honestly, it's all starting to get jumbled up in my head now.

When the visa is approved, yes, after he moves to the USA, no.

If your fiance wanted to work or keep working then a CR1 visa would have been the better choice.
