I am getting different information. When filing the K-1 Visa, after it is approved and when your fiance goes to their meeting at the embassy, do they need to bring an affidavit of support with them? Some things say yes, and then some say you don't need to worry about that until you apply for adjustment of status. Any clarity would be much appreciated.

The affidavit of support for a K-1 during the embassy interview is the I-134 (http://www.uscis.gov/i-134), and which you need to have an original signature on, with supporting evidence including primarily your most recent 1040 and W-2 (or IRS transcript). To further substantiate income, some COs ask for employment certificate too and recent payment stubs. If self-employed, you would need 3 years of your 1040 or IRS transcript.

I can't see your fiance's country in your profile, but you should be able to see this requirement when you check it out on the US embassy website of your beneficiary's country where the interview will take place.

Seems like India has 3 consulates (Chennai, Mumbai and Delhi). Might as well post your question on the India regional forum, maybe somebody can re-direct you to any guide or blogs: http://www.visajourney.com/forums/forum/149-india/

But for the embassy interview requirements, always always check your US consulate website, as they might give updates.
