My co sponsor makes over 300,000$ a year, but his taxes won't be complete for 2013 until October so I have bank statements and 2010,2011, and 2013 taxes and tax returns... And a letter from his accountant. Do u think they will demand the 2013 tax returns with all the other info I provided?

Tax return transcripts from 2010, 2011 and 2012 are fine. No bank statements needed. 2013 taxes will not be required until after April 15.

It will depend on the CO. Does the co-sponsor have W-2s or 1099s from 2013 they could provide copies of, even if they have not filed their 2013 taxes yet? Also, if they are self-employed, then I think the bank statements showing how much they make each month is helpful, so I would not say they are not needed.

What country, requirements may vary by embassy?

Three years of ITR are not needed, just the most recent tax return, which right now is 2012. If you interview is after April 15th and being your fiance files an extension I would suggest bringing a copy of the completed extension form also.

he's not self employed, and I think they just sent their w2s and 1099's to their accountant but I think they can get a copy of them.. Would that be sufficient if our interview was April 10th?

If he is going to file an extension, then he should do it before your interview so you can take a copy of the extension filing. Bring copies of his 2013 W-2s and 1099s along with 2012 IRS tax transcript(http://www.irs.gov/Individuals/Get-Transcript), letter from employer and/or most recent pay stub(s).
