OK, so thinking back five years when I was the beneficiary of K-1, my then USC wife had to provide the last three years tax returns for the poverty guidelines thing. This she did, and our very straightforward case was done and dusted within 8 months, start to finish, within the same calendar year.

Now this whole F2A lark takes much longer, anywhere from 2-3 years I understand. That being the case, would I then have to provide the extra 2-3 years tax returns to USCIS at the time the case was finally coming up for interview? Does that question make any sense? Sorry, it's just that it seems like an eternity since I went through all this and I can remember very little!

OK, I think you've misunderstood me (or I've misunderstood you!) Yes, I know at the time of filing you enclose the most recent returns. What I'm asking is (and this is why I used the K-1 comparison) is this:

Let's say I file right now. I'd enclose tax returns for 2011, 2012, & 2013 (2013 being the newest/latest/current return). If my wife's interview didn't happen for, say, another 3 years, would the tax returns from said period (i.e. '14, '15, & '16) have to be submitted as an appendage to the original application, so as to show continued adherence to the financial requirements? Is that a better way of putting the question?

Tax returns are not required for filing i130. It will be needed down the line during the NVC stage. You submit whatever is the most recent for that period. If somehow they get interviewed after another tax year, bring the most recent for the embassy interview.
