At this moment, my fiancé and I are gathering all proper paperwork for him to take to the embassy with him. Not that I am not thrilled with all your guys' help, but who would you suggest I call to ask specific questions, that I could refer back to if the information turns out wrong? The USCIS? Or somewhere else? And if you have contact information for them, that would be SO lovely. Thank you all in advance!

There is no number you can call for help.

USCIS and the US Embassy process the cases looking for fraud. Their job is not to give you legal advice on how to file your case.

If you want help, it's either us or paying a lawyer. USCIS and the US Embassy will not help you figure out what you need to file.

What paperwork is mandatory should be in the letter you received. Additionally you can check page 3 and 5 on http://travel.state.gov/visa/immigrants/info/info_3731.html, however read them all. Would this work as holy grail? Nope and rest will be on you. Not sure if USCIS or embassy work give anything better.

At the end you will realize the suggestions would help you to make the right choice for yourself. Good luck
