I'm getting ready to send off the initial K-1 visa application (I-129f and such). Should I sign and date everything? Sign and date all copies of everything, including the copy of my birth certificatate, the passport photos (I wrote the full names on the back but didn't sign/date the back), phone call logs, screenshots of our email communications, printouts of my hotel reservations, the copies of my boarding passes... you know, everything?

No, only some documents have a space for the signature and date.

Don't forget to add the date + signature on the intent to marry and send the originals.

Passport pictures only need the name on the person in the picture written on the back and that's that. Everything else (chat logs, boarding passes etc) doesn't need a signature nor a date.

Hi! You don't need to sign all the papers. I already have my papers in the Consulate and I'm waiting for the letter from the Embassy. I did not sign nor write my name in the back portion of my papers. Yes, I signed only those documents that has my printed name like in the forms and my letter of intent.

You only need to sign and date the documents that require your signature and a date. Of course names on the back of the passport photos and on the photos of you two together.
