My wife and I currently live in Barcelona, our plan is to spend 6-9 months per year in US and 3 months back in Barcelona.

Our question is, after my wife receives her CR-1 how much time is she required to be in the US the first time after she gets the visa? We know we have to go within 6 months, but the next time we are going is for a wedding...the plan was not to stay permanently yet.

Is it possible that she goes, gets her green card, stays in the US for two weeks, then we return to spain for 2-3 months before moving more permanent to the US?

Is there a minimum time she will have to stay during our visit for the wedding?

No, she just needs to spend more time in the USA than out of it. ;) Sounds like that is your plan anyhow. :)
