I'm pretty sure you could omit the address. They won't send you an RFE for "Letter of intent missing correct address"

I didn't put addresses on many of the letters I sent, and didn't have a problem, but YMMV, of course.

they are asking for STATEMENT of Intent to Marry within 90 days of arrival in the US. not a LETTER. statements don't need addresses.

This is because you send letters of intent with the I-129F petition and then later send new letters of intent for the K-1 interview at the consulate. The example is simply showing that the first ones for the I-129F petition, you can put the petition mailing address on, and then when you need new ones later, you can put the consualte address on. HOWEVER, addresses are not required on the letters of intent and you can simply not put any address at all, on any of them.
