For a CR1 visa the NVC gets the interview date set for you. They work directly with the embassy. So no, you will not know when a date is available until you are notified.

Like MedRoni said, no, you can't see what dates are available because the date is given to you. You can't really even know how long it will be until you're given the date or where you are in the waiting line. You can look at other timelines here on VJ to get an idea, but that's more of an estimation. You basically just have to wait.
