Okay, we did a K-1 visa, and we've already gotten married.

We also have already applied to have my wife's name changed with the SSN Administration.

How should we file the AOS paperwork (e.g under her maiden or now married name (even though haven't yet received new SSN card))?

Do your paperwork in the name you want to have on your greencard. You can place your maiden name in the appropriate section of the application as well as "other names used" for clarification.

You don't need the new card to file.

The EAD/AP and green card will come with whatever name you fill out the forms with. If she is changing/has changed her name to yours since you married, then she needs to fill out the forms with her married name, the one she will use from now on.
