I know this is not too helpful now, but you should have filed for AP with your I-485 and I-765. The EAD and AP fees are both waived, so it would not have cost anymore to have done so, and you would have received a combo EAD/AP card. You can file the I-131 now and include a copy of the NOA from filing the I-485 and the fee will still be waived, however, it takes 2-3 months to process it, as you have seen with the EAD. Your green card may come before the AP does, and with your green card, the EAD and AP become null and void.

Yes, you can stay out of the country for 2 months without needing to worry about getting a re-entry permit.

Yup, what Jay said. If you get an interview you will both have to return, though, so you'd have to make sure someone was checking your mail. Probably doesn't matter if you didn't already file AP, though.

Best of luck on this one. When you file AOS, you can file AP, EAD, and GC all at the same time. (have to read the instructions), and enclose the documentation for each form. Nice part is if you factor in the costs, only about $300 per form if you divide it out. You can still file now, just make sure to include your NOA-1 from you AOS. It will take about 60 days. Follow the example forms on here with the I-131 supplement.

Must also stress do not leave the country without your GC or AP. Since it has already been 90 days for filing your GC, VJ'ers are right. You may be close. However, I do have a cousin in Alabama who is not getting her GC until July and they filed in November. (my wife get her GC before her cousin, or be very close to her.) My wife's cousin came in August then had a baby in September, while my wife arrived in September and is having a baby in July.
