My boyfriend and I plan to get married next year. I plan to file for the K-1 visa so we can get married in the US. We meet all the requirements for the visa, except the income requirements. I'm a full time student, about to graduate and I do work a part-time but it is obviously not enough to meet the requirement. I have read that for an 1-134 it requires that the petitioner must be 100% above federal poverty line. My question is, does that also apply to the k-1 visa?

Also, my parents are willing to support us in the process. Is it possible for them to provide their financial information as prove that they will support my boyfriend and I in this process? Or does it have to be my own financial situation?

They usually look at 125%, because 100% is for active duty military.

Generally it has to be the USC's income, because the I-134 is based off of the I-864, which is a document you will need to file to get his permanent residency. However, different consulates do slightly different things. Most consulates in this situation would require a co-sponsor, but you'll have to check with Mexico's requirements on this issue. You parents can for sure be the co-sponsors for the I-864 once he gets to the US. Keep in mind there are more forms to file and more money to pay ($1070) after your fiance arrives to the US.
