Hang on a sec you say you applied K1 but your time line says you have done K1 and are doing AOS? Which is it and if you did AOS you had to send n I-864 affadavit of support to show income for your wife/ Please explain?

As long as your current income meets/exceeds the income requirements at the time of the interview and you have proof, you should be alright.

It may be consulate-specific but I didn't have to submit a new G-325A when my job situation changed.

If you have an already planned job change with a break of a month or so, I don't think it would be a problem. Just make sure you have a letter or other proof (at interview time) that the new income will be there.

Good luck!
