So I am currently gathering info for my fiancee and her interview. I sent in the I-134 with the I-129F petition back in July, and am wondering if I should resend one.

If all goes well with the packet handling, the I-134 i already sent will be close to a year old. Should I just be regathering this info instead of waiting for packet instructions?

What I originally sent in with the I134:

-Bank Statement with length of account/current balance

-Last 3 years Tax transcript

-Employment verification letter

If anyone did it this way could chime in, that would be great!

You have to resend it. It is not to be sent with the I-129F it is to be sent to the beneficiary for the interview. Supporting documents and the form need to be signed and dated as close to the interview as possible or they will ask for newer supporting documents and a new I-134.

Your I-129f was approved in 5 days from your NOA1 date.

Your interview took 67 days from your I-129F NOA1 date.

AOS was approved in 2 months and 8 days without interview.

ROC was approved in 3 months and 2 days without interview.

Absolutely correct. USCIS probably tossed the I-134 you sent as they don't deal with them.
