Can the beneficiary do their own translations?

From the USCIS website it appears anyone who is competent can do the translations of documents. Since my fiance is fluent in both French and English we are assuming that she herself could translate a couple of french documents and certify that they are correct. Anyone have any problems with the beneficiary doing this?

they can but whether they should is a differrent question.

i believe it might look like a conflict of interest for the petitioner or beneficiary to do their own translations.

I haven't noted many that do their own translations but the ones I have noted have been approved at USCIS level. I'm in two minds as to whether its a good idea or not.

My fiancee did her G-325A herself (I guess that's easy enough) and even though she could've done her birth cert too, she felt it was better to be official. It's a pretty simple process really, just get a stamp on it.

I think you'd be OK if your fiancee did it herself. Why not? Give it a shot. But, just in case, to be more "official" why not have someone else do it too. That way there's another "official" stamp on that packet somewhere.
