I have so many questions and feel so overwhelmed with it all. I was wonder also why are we discouraged in visiting while the petition process is going on, why could we be denied entry for a visit to our fiancee

You are really not discouraged from visiting, rather you are (if you are going to visit) encouraged to be aware and prepared.

For most folks (Canadians not totally except although it often seems to be more relaxed) it is possible to be turned away at the border (for most folks, that is the airport) if the CBP officer feels you intend to remain (not leave in other words). You are encouraged to have with you, strong ties to your home country (things like employment, living arrangements, etc) (You can read a bit more about this subject here.)

As far as processing time (petition to interview), it is currently around 200 days.

I have a tendency to get overwhelmed as well.

Just think about it ONE STEP at a time, one form at a time. And every day that goes by, you're closer to being together!

Take your time, read the guides, read other people's posts, and relax. The more you learn, the less overwhelmed you'll feel. I lurked on this forum for 4 months before I finally signed up. By that time, pretty much all of my questions had been answered by reading the information available here.

Otto und Karin gave you a good description of the potential problems with visiting after a petition has been submitted. Nobody would discourage you from visiting. You just have to be more prepared because there's an increased chance you would be denied entry. The petition makes it clear to the US government that the foreign beneficiary does eventually intend to immigrate to the US. This puts a heavier burden on them to prove to the CBP officers that they don't intend to remain in the US when they enter with a non-immigrant pass.

Thank you, I have been so depressed and felt as if my world had been turned up side down. I feel lost and lonely right now. I don't even know how long its going to take and this has been rather disturbing to me, I hate to say it.

It has been a ride in ahalf, I just hope that this year we can finally get married and get on with our lives. I have never been through so much like this before, I feel so tired and overwhelmed. I am glad that you have given me helpful advise, thank you from the bottom of my heart.
