Yes, a cosponsor must complete the affidavit of support and include all needed information. You as petitioner must also complete the affidavit and supply all needed info regardless of income level.

With the I-129f petition you only need to send proof of meeting. You do not need to send the I-134, that comes at the interview stage. So no you don't need to send it with the petition. You can put it but it does not have to be there.

If my income or financial history is dicey and I need a co-sponsor does he have to fill out an I-134 and provide tax returns, pay stubs, and bank statements along with my own as part of my original fiancee application 129F form submission?

Affidavit of Support isn't submitted with the original petition. You won't need it until your fiance's interview, but it's better to get all the stuff together ahead of time. :) Other than that, yes, they'll have to submit the same documents you would have to.

I am very early in the K-1 process having just filed my I-129F, but looking over I-134 requirements I am nervous about my financials.

Should I proactively add a cosponsor just in case my financial stuff won't cut it. Additionally would adding a co-sponsor automatically make them responsible for my fiancee or could they deem my finances to be in good order and not require my co-sponsor?

You should get your co-sponsor lined up and start collecting the past 3 years of information for both of you- (depending on when your interview is your 2009 information might not be done or you might have it). The I-134 form will be expiring soon- but I think the requirements of proof wont change much. So getting tax transcripts, letters, and other things. But you don't have to send it in until it is at the embassy stage. Usually people send it to their fiance after they have gotten their NOA-2.
