I'm having a difficult time finding information on the varicella vaccine and if the complete series (2 doses) is needed before applying for AOS.

Aside from that answer, does anyone have the link to the USCIS required vaccination page?

This is up to the US Civil Surgeon that you take your vaccination record to for transfer to I-693.

My wife just had the first shot, just after visa interview, and the US Civil Surgeon we used signed off on the I-693 with just the first shot done.

Note it is up to you to get the additional required shots done, if you had chicken-pox when young, more than likeli you wont need the additional shot done.
