So we just got married and we're about to apply for the adjustment of status. If I don't submit form 765 will my wife have to wait until the interview to get her work permit? Does that take about a year?

If you don't submit it, she won't get a work permit. She will be eligible to work when she receives her permanent resident card.

Why not submit it? There is no fee for the EAD or AP with the filing of the I-485. Total cost without EAD and AP = $1010. Total cost with EAD and AP = $1010.

I would go ahead and do the extra paper work and file for the AP and EAD since there is no fee when you file for the I-485! That way if the GC delays at least your wife will be able to travel and work.

It's always a good idea to file for both, the EAD and AP because you never know how long it will take them to approve the I-485. That way, your wife will be able to work and travel outside the US while her AOS is pending.

"better safe than sorry" was the approach I used (we didn't travel outside US for the six months till Pras got her conditional GC, but...)
