Hello

I have read some threads in the past on the Italian thread about how the USC translated for the beneficiary the Birth Certificate and it was no problem as long as it was notarized. Am I safe to do this.. ?

There is something on the guides here about this.

Unless a Notary or Notarial service is doing the translation, there is no purpose in notarizing. US Notaries simply attest to who signed. That's really not an issue when individuals translate documents.
