Once we get our petition aproval and the fiancee package, how much time do we need to have the interview? Is there a limit of time?

The consulate will instruct you when the interview appointment will be. They will extend the validity of I-129F NOA2 letter if the interview falls after the NOA2 letter expiration.

It is different for different consulates, but usually it takes about 7 months since sending the petition, about 2-3 months from approval. Look at the vsa journey "timelines". Check people that applied in Mexico.

I do believe that the US Consulate Ciudad Juarez has walk-in interviews for K-1 applicants after all the required documents are in hand. Check their web site to verify that this information is still valid.
