My fiance & I started an online business. Since he's currently a refugee with temporary residence in Italy, should we use this as his form of employment on the form?  Or should we leave it blank?  Thanks for your time & assistance.

If the online business is his job then put that on the form, otherwise put whatever his job is whether it be unemployed or whatever else he does.

I-130 filed: February 5, 2016

NOA1: February 8, 2016 Nebraska

NOA2: July 21, 2016

Interview: December 6, 2016 London

POE: December 19, 2016 Las Vegas

N-400 filed: September 30, 2019

Interview: March 22, 2021 Seattle

Oath: March 22, 2021 COVID-style same-day oath

 

Now a US citizen!

I agree with Jordan.  Also, make sure you check the I129F form that you are using.  If it is dated April 2017, then you do not need the G325A, as the employment information will go directly on the I129F form.
