You don't actually need 6 months of pay stubs though. I have a new job and have 3 months of paystubs. An employment letter is definitely good too.

Again - 6 months is the general rule of thumb when there is a lack of financial history/stability - granted depending on consulate or whether it is during the K1 or AOS process and whether you are also presenting other assets etc., some CO's and IO's are more forgiving. Three months might be accepted for some - but there is also the possibility being asked to supply more financial proof when you don't present more. We have seen this happen here on VJ. That's why it's always better to advise on the side of caution. Having to supply documents after the interview can seriously delay your visa.

Ok then...this is sounding like my OWN plan to apply for K1 based solely on my offer letter might not be a solid plan.

I have another thread on this, but... We both currently live full time over seas, can't do DCF (no full consulate here). So... I'll need to apply for a job in the US before we move. We had planned on starting her application process immediately, so that her moving delay would be the shortest possible, especially since its less easy to visit on a K1 vs IR1/CR1.

This thread is implying that we might likely get rejected.  I'd get a co sponsor, but I've also read that, due to the unenforceable nature of the k1 affidavit of support (i864, was it?), that these applications are also often rejected.  Please correct me if I'm wrong on that! I very much want to be wrong on that last one.
