I'd wait for couple of weeks. If you don't hear anything after that, make an Infopass. My son and I had different day for biometric, it was just one day different though. I'm not sure if it usual, somebody else here maybe have better idea.

I live in Boston, sent application to service center in Texas. After i did the finger prints i was given back the notice, is this normal, are we supposed to take the notice back with us?

I think it's normal. When I had biometric for GC, they always gave me back the notice.

Most states let you to renew DL I-797 and the expired GC.
I-797 extend a year from the expiration date on GC.

Sorry if this is posted but I'm getting zero results on my searches. (even "N-400" came up with no results)
We're filling the N-400 for my wife and it has a section to include our son's information on it. By filing her's with him on it is he also filing for the N-400?
(This is the way the green card has worked in the past)
Or will we have to file a separate N-400 for him? (A way for the government to get another $675 basically)

If your son under 18 years old, he has to file separately when he's 18 years old.

I just sent copies of joint income tax returns for last 3 years. I don't think will be a problem, but not sure yet.
All depends on the IO. Some can be tough for proof of still living together.
Of course I sent a lot more than just copies of joint income tax returns to proof that we're living together.

I think you need to file I-130, but I'm not sure if your parents can stay. Go to Bringing Family Members of US citizen to US in the main forums page here, you'll find a lot of information.

You don't need to file I-751 again. After biometric, you just wait for the 10 years Green Card.
