Medical needs only be valid on the day of entry. That's why the visa will expire on the day the medical expires. No requirement for post entry validity.
I don't think you understand that a k1 doesn't have a vaccination requirement. The vaccintion requirement comes during AOS. OP is good to go for the k1 but needs it for AOS

If you are going to do this yourself, you need to become a student of the process. You need to read the instructions carefully. One item in the instructions stipulates that any evidence submitted that is not in English needs to be accompanied by a translation.
