As long as your police certificate is valid during the interview, it will be valid during the POE.

Police certificate is needed during the interview. You will need to hand over the police certificate to the consulate officer during the interview. The consulate officer will include it together with other documents in your sealed package. The package that will be pass to the officer at POE.

I called the NVC after about 2 weeks after getting the approval from USCIS and they gave me my case number. From there on, I just checked the status on https://ceac.state.gov/ceacstattracker/status.aspx
