The wife would generally provide an I-864A for each I-864.
The IRS transcript covers the required tax return copy part of things. The W-2 is optional, but I have seen at least 1 report of it being requested recently. That said, unless the income is via self-employment, current income is determined by pay stubs and/or an employment letter (taxes would only show past income). So thoose should be incluced too.

It took me about 1 month and a half. I would suggest emailing NVC. On the letter that states they sent it to NVC has instructions on how to email them. I emailed them and 2 days after I received the email with the case number.

Yup, you can. I pre-filled the I-130 and have all the supporting documents ready in one packet. I went to the Oath, got out, turned in the application for SSN (because the SSN had a table right outside so it was convenient), registered to vote (again, table right there), went to the photo shop, made several copies of the naturalization certificate, went straight to the county recorder office to apply for my passport (they take the original certificate with the application for passport), went home, put the copy of the naturalization with the pre-prepared I-130 for my mom, and headed to the post office to send it out.
