My husband filed in September and did finger prints around January 20, and our file is also LIN and no update since case received either .....

Yes, sounds like she is young, just need evidence she is your step daughter.

No idea regarding your first question. For the second one, I had the same issue. I read that the officer reviewing your case does not necessarily have all the evidence that you submitted with your prior applications so to be on the safe side and limit the risk of receiving a RFE, I resubmitted evidence for the time between the mariage and the first interview.

day 153 and my status finally changed! Greencard is ready to be scheduled for interview since Monday and today my EAD status changed to card is being produced! 

Today is day 105 for our wait for EAD.... my husband and I are going to Florida for our honeymoon for 9 days and I really hope we'll hear something by the time we get back

Was the RFIE for your AOS or EAD? And is May 1 the day they received your response? 
My NOA 1 is Feb 2, but I got an RFIE for my AOS and they got the response April 18.

If your 2016 is still low then you projected wrong when you sent it in since you told them what you thought you would make. They didn't think you would make this and are now asking for the return.
For 2017 however, your anticipated income will be more substantiated since you will have the same earnings for the entire year.
I would send a long recent paystubs, with the 2016 return and w2.
There is no reason why this shouldn't be enough and it's logical why the rfe was sent.

Also, although I didn't get an email yet, the office was able to tell him that the visa is ready in Kiev and it will be at the pick up location tomorrow!!! I cannot believe he'll be here in three days!!!
