Get the IRS sorted out. Owing a big balance has been problematic for VJ members in the past. The expedite will just get you to the brick wall faster.

If he's not current on a payment plan with the IRS it's likely that his petition won't be approved.
He needs some help for his business, or to shut it down and find a job. You being there won't necessarily improve anything. The consular officer isn't a business analyst. No doubt they would be sympathetic to his situation, but it may not be relevant to the immigrant petition.
A failing business is tremendous amount of stress. Unfotunately it seems that it has created a significant roadblock that an expedite can't overcome. He needs to sit down wih his accountant and figure out the best course of action. Closing a business is like a divorce. It's painful but survivable.
It won't hurt the case to ask for an expedite. But there may be a larger problem.

Wait for the priority date to become current and then you can update the information. There may be another child during the 10 year wait. Life happens.

If accepted by the embassy the interview would be there.

A joint sponsor can be any US citizen or green card holder. Talk to relatives or close friends to find someone willing to submit an affidavit of support.

By the 5 year rule you have nothing to do with it. Her establishing a primary residence outside the US would seem to disqualify her.
Being untruthful can have serious consequences. Choose your path wisely.

In most cases the beneficiary needs to be a legal resident of the country, not a visitor to do DCF. It appears that you will do your interview in Indonesia.

You won't be able to "unshow" the K1 petition. It is in the USCIS system. It can always be a factor no matter what path you choose. For certainty that he can get in for the wedding the K1 is the ticket. How much of a risk is it to withdraw? I'm not sure anyone can know.
The truth is always the best story, because it never changes under scrutiny. Your circumstances sound reasonable. Life happens.

100 photos is probably overkill. If it makes you feel more secure print several per page and label on the back.
If you've got the boarding passes and visa stamps then the itinerary and ticket receipts are not needed.
Take your cues from others that have been through Lagos. Anywhere else just isn't the same. Even Vietnam, where I had to prepare for, isn't at Lagos level.
A letter outlining the evolution of your relationship may be helpful. It guides the adjudicator through all the evidence that you submit.

It's in the system. Offer letters don't mean much. All you can do is tell the truth. It's up to the CBP officer at the POE.
Why not go to the interview and get the visa? Then there are no worries.

Where are you getting this "information?" The workload at the service centers will vary. They route them as best they can to keep it even. It goes through cycles as far as which center is "fast." I have never heard about an expedite for K1's from any particular country.

You need to get your tax returns sorted out. The US taxes on worldwide income. You may not owe tax, but if you've earned more than $10,000 in any of the past 3 years outside the US then you will need to file a tax return. (See the form I-864 for more information as well as the I-864 FAQ link in my signature)
As previously stated, your spouse's income can only be counted if it will continue from the same source upon relocating. Since she came on a visitor visa that seems unlikely.

It sounds like many of your important documents are at home in Korea. You'll need to get them somehow now that you've made an unplanned move to the US.

A work visa would not be issued for this type of employment no matter where the person is from originally.

I-134 does not allow for incomes to be combined. So any joint sponsor would have to meet the income requirement alone.
If your 2 jobs give you an income that meets the requirement then submit letters from both employers along with several recent paystubs to support your income claim. Current and continuing income is what they want to see. It sounds like you have that.
If there are questions simply answer with the truth that you were out of the country with your fiance and are now back and working.

You must give evidence that you two have met face to face within the last 2 years to have a K1 petition approved.
As far as showing a bona fide relationship then evidence from the beginning to the present is typically sent.
2 separate things. Both are needed.
