I've actually petitioned my British fiance to join me and our son in America. I didn't think I'd need a K2 as my son was born here in the states and we had started the process before I got pregnant. We're trying to get his Dad here from the UK. Sorry, I should have explained that I was back in America.

I filled out the I-134 and my joint sponsor filled one out as well as my income doesn't quite reach requirement and I've been out of work due to maternity leave. Will I need to fill out I-864 when my fiance adjusts his status? I didn't think I needed one for just the K1.

This. What Kay said exactly. Prepare yours and see if they will accept. If not, pull out Dad's if interviewer (second time called up) wants another sponsor. -

I have my interview tomorrow, and my fiance has given me his pay stubs, his letter of employment, his work contract and also gave me his tax returns. However, his tax returns aren't that strong, but still - it's btter to haveb too much than not enough.

London accepts 100% with the I-134 for a K-1 visa. You will need to meet the 125% later for AOS and the I-864.
London also only needs one sponsor. If using a co-sponsor, you only need to supply the co-sponsor's I-134 and proof of income. If you meet the requirement, then you will just need yours. You do not need bank statements. London doesn't require that you prove the income in several different ways, just one or two will do(taxes and letter from employer).
