Overstaying is not illegal. Entering the US without inspection is illegal because you will not be allowed to adjust status in the USA. Since she is in a genuine relationship, she can get married and adjust her status ASAP. You can also travel using your passport domestically because TSA don't look at visa. They only verify information looking at the biographical page of your passport.

You have to be married to file for AOS based upon a K-1 Visa. You already provided intent to marry when the petition was filed and again when the visa interview was held. For AOS you must be married. They were correct to deny your AOS petition as you were not married when you filed it. They have to comply with US law and the regulations.
You did not have to file prior to marriage. You have all the time in the world to file for AOS after you marry (within 90 days) of arriving. The only downside is you will be out of status and subject to detention/court proceedings if you fail to file prior to the expiration of the I-94. As of right now you are out of status until you file a new AOS application.

IF they ask you the purpose of your trip, you could start by saying "pleasure" . If you're asked ANYTHING further, you could say, "I'm getting married and returning to Canada on March 19th when my husband and I will be starting the CR1 process." and have your evidence of ties to Canada handy.

I'd recommend filing the CR-1. That is a marriage according to Islamic custom. With the large number of Muslims in the UK, I highly doubt the embassy will be unaware of such customs or anything. But this is irrelevant as his visa expires in April of 2014. He will finish this process at home.
If you try and file the K-1, while concealing that you are married, yes even with that little white paper, it could constitute fraud and it's not worth the risk. Get a letter of attestation from the Imam if you must to accompany that little white paper. When he goes back to Pakistan, by Islamic law, he will be considered married. Pakistani petitioners already suffer severely long AP waits. Don't gamble with anything else that might slow down the process.
And that temporary marriage mentioned above wouldn't get any marriage benefits except the one that they obtain this form of marriage for in the first place....
So we should all know it's definitely not that.
