LOL no worries. If it was delivered within the 90-day window you will be fine.
HOWEVER: If you call the USCIS center and (1) get an actual person and (2) that person knows anything at all of any value to you it will definitely be a post-worthy accomplishment. Achieve that and we will petition the VJ congress to use your experience to create and post a guide.

No. You still follow all the example forms here on VJ. Your status is 'K-1 visa holder'. http://www.visajourney.com/examples/INS-Form-I-485.pdf
It does not matter that your I-94 is expired. You file exactly the same as anyone else adjusting from a K-1.
A K-1 visa is a one-time entry visa and it does not get renewed. Not sure what you read about the AP form. For the I-131, you do not need to give any reasons or explanation statements as for why you want/need AP. You skip a lot of the form too, as it states at the bottom of Page 2 of the form itself. Also, leave the dates for the trip and length blank, then hand-write 'Unknown' after you print out the form. You do not need travel plans to get AP. It is routinely given to adjustment applicants. Alternatively, you can make up some date and length too. http://www.visajourney.com/examples/INS-Form-I-131.pdf

No. You just need a specific amount of hours. Which I'm sure you have!
Apply for your claim, worst case they say 'no', and you appeal it, and you will most likely win!

Call the doctor and move your appointment date.
I did my appointment a week before, they really work with you to get it done quickly and in time for your interview. I had such short notice I paniced but, the doctor was pretty cool and made sure to have everything done two days before my appointment.

Nope because Canada sucks!
The greyhound is retarded over here. I would always make sure I would book my ticket in advance to assure seating. One time I got screwed. They had three seats open to cross over the border, I was fourth in line and you know what the driver told me? "Should've got here earlier, there is nothing I can do" I almost told him to go yourself.
I ended up taking a taxi over because I don't drive and that cost more then my round trip. Grey hound in the US actually reserves the seat unlike canada. And it's way cheaper to in the states to take greyhound. If I bought my tickets in canada, it would be 80+ dollars so, what I would do, just buy my ticket from canada to US, I knew my transfer times, booked for that bus, saving myself 40 dollars! I don't understand how we get raped in cost over here. Just to cross from canada to US it was 14 dollars I think, from US to canada, 5bucks. It's non sense!

USA Greyhound will deliver your package to the nearest station.
So, if you can cross over with your things packaged, and find a greyhound station, just have it dropped off closest to your fiance and they can pick it up. I don't know cost, or details, I just remember seeing ads around the terminal, I'm sure a lot of students use this. I don't know cost or anything but, it's worth looking into!

I just want to add to this. My fiance didn't send in any of our online conversations. And I wrote the "timeline" of how we met and it was two short paragraphs. We added 6 pictures and bus tickets and hotel stays.
They just want hard copy proof of you physically being together and more then once, thats all.

I've been a cook for a major hotel for over five years so, it's nice to take the break from that. Both my husband and I bodybuild so, most of my day is spent cooking but, not for 500+ people any more - Thank god! And I was the only girl on my shift and I was getting sick of the glass ceiling. The only plus side of that job was, I never had to buy groceries!
