Do you know what the expiration would be on that FBI check?  What is the oldest they would accept? I got one October 2025.

Our case is at the NVC and we could get a interview notice anytime this month.  I believe that might put the interview approx May 2026 sometime.  So the FBI History Check would be 7 months old.

I think within one year should be good but if they do not state  a time frame I would guess it is up to the  CFO interviewer.
Just remember the interviewer can decide to not grant the CFO if they choose to and they might demand an updated  background check. It's really up to them

I am curious if they are asking for the same if the couple is already married. Most of these I have seen asking for FBI background checks have been K1 applicants. Have we had any recent CR1/IR1 attend CFO that have been asked for the same?

K1 visa holders have probably always had a much higher level of scrutiny from CFO than CR1/IR1 visa holders.  CFO seems to be especially impressed if a marriage is fully recognized by the Philippine government with PSA documentation.  But, at the end of the day, CFO's counselors have a great deal of leeway choosing what they might ask for.  They can definitely make up rules as they go along.  They would probably base their requirements on their own temperament and face to face sizing up whatever they may perceive about your wife.  If they perceive her (by their own judgemental standards) as a mature and "worldly" adult who knows you well and is firmly in control of her own destiny, then they probably go easy on the requirements.  If they perceive her as a naive girl from the province blindly chasing a dream overseas they could go hard on her.  The difficult part for Americans to understand is that there is no precise checklist that guarantees the outcome of a meeting with them.
