I'm a USC and my fiance is Italian. At what point of the K1 process should she obtain the required police reports? Is it better to wait until it's asked for or start the process after I submit the I-129f?

Also, will this report be needed again when adjusting status after we get married in the US?

I would get it when you receive the NOA2 from USCIS. It takes a month or two to get to the embassy after approval notice/ interview so you should have enough time. If she lived in any other country (not the country she is interviewing in)  and won’t be returning she can get those PCCs now.

Also, will this report be needed again when adjusting status after we get married in the US?- No
