Since my case has been transferred do NBC do I go by the original service center that my case was at (SRC; Texas center) or do I go by NBC (I’m not even sure what their processing time for i751 is)

processing time can be looked up here https://egov.uscis.gov/processing-times/ however it is as good as some picking a random number.  Processing times are only estimates and dont have much relevance to individual cases. your case is processed in a location based on your first 3 digits of receipt number. some times they can transfer.
