Marry and file just the I-130 (with I-130A and copy of marriage certificate, etc.):

If your girlfriend lives in Italy, see if she's eligible to file the I-130 with USCIS Rome; it's faster: https://www.uscis.gov/about-us/find-uscis-office/international-offices/italy-uscis-rome-field-office

When you enter the US with the CR-1 you can immediately work: https://www.uscis.gov/i-9-central/temporary-i-551-stamps-and-mrivs

As mentioned before, if you plan to get married here, you msut return to your country and file from there.  Best of luck!
