Timeline

 We have an interview appointment coming up soon and I have not done my 2018 taxes yet. Will the embassy require those or will my 2017 taxes be sufficient since they are my most recent completed taxes?

Unless your specific embassy has different rules, they will very likely require 2018 taxes. 

You need to prove you can sponsor your fiancée. Not providing the required evidence, puts your fiancée's visa at risk of being refused.

Since it’s past the tax date, they will want 2018 or a letter of extension/ exemption as to why you didn’t file.  If you have that documentation, bring that along with 2017.

 Ok, thanks. I applied for an extension while I wait for all my paperwork from others. Don't see why they would need more than W-2 forms. Hopefully they will be happy with 2017 taxes and my current W-2 paperwork along with something showing that I applied for an extension.
