Hello - I have my naturalization interview on Friday and my interview letter says I should bring my spouses birth certificate. I am divorced and applying for naturalization as I've lived her for 10 years and meet the requirements.

Do I still need to bring a copy of my ex-husband's birth certificate, as that was how I originally obtained residency?

Applying under 5 year residency rule, you do not need ex-husband's birth certificate.  Did you add his birth certificate when you applied?  You need to take your original birth certificate.

I did not provide his birth certificate. I did provide my birth certificate and my divorce decree. I wasn't sure if that is just a standard request they ask of everyone, though it may not be applicable to everyone??

Yes, it is  a standard format and  you will be fine.  Best of luck with your interview.  Take your original birth certificate and other original documents you submitted with applications.
