Cayman Islands. Am I the only one??

I've been having so much trouble finding information about the Cayman islands on this forum. All I know if, my fiance home country is JAMAICA. so we're going there for the interview next month. PROCESS is not quite the same because he no longer lives there. It makes it a lot harder because since the medical has to be 10 days prior, this means he has to stay in Jamaica for two weeks....

 

MY QUESTION IS: So when the visa is ready, we will have already flown back to where he currently lives.....HOW can he get the visa by mail if they don't allow us to input an address in the Cayman islands on the sign up page (on the interview schedule site)? 

How do you schedule a DHL DELIVERY? Do I put the embassy address for them to pick it up from and then his current address for them to deliver to??
