I would not sign, just note that it was filed electronically. The catch is that you need to include every single item that was filed with the 1040, i.e. W2, 1099-MISC, and etc. Very cumbersome with a good chance of things getting lost/misplaced. I still recommend going to the IRS office if you can.

it looks like the tax transcript was changed just recently - https://www.irs.gov/newsroom/coming-soon-a-new-tax-transcript-to-better-protect-taxpayer-data

I don't think it will make a difference going to the office!

The RFIE stated full tax return income submitted to the IRS in most recent year . or should I send both the transcript and the 1040A since I already mailed my W2s and employment letter etc...

Send them what they asked for, exactly.  I would also include the transcript too.

I went to the IRS office today. they gave me the same transcript as the one I printed online. He said now they don't disclose much information for security reasons.

Yes, I will send both.

RFE is to submit completed tax return- does that mean I need to include the schedules etc?  it around 30 pages when I print from TurboTax,  or just the 1040A pages and W2s?

Again, send them EXACTLY WHAT THEY ASK FOR.  You're only talking about a few additional dollars for postage.  Send it!

Right now, I and my wife are in the same situation. We received exactly the same letter requesting for initial evidence.
I would like to know how did it turn out for you? Did you send both, or it is just 1040 what they are asking for? I have it without signature also.
