We are awaiting my wife's GC interview after filing I-485 after entering the country on K-1 last year. Is it possible for her to get a I-551 stamp on her passport in the interim?

10/27/16....NOA1 Date on Hard Copy Notice
10/28/16....NOA1 Text and Email. Case sent to CSC
11/17/16....Online Status Update (RFE)

11/21/16....RFE hard copy received

11/23/16....RFE received by CSC

11/30/16....NOA2 approved - Case status changed USCIS App

12/16/16....NVC Case Status # Assigned (52 days)

12/21/16....Case Status is "Ready" at embassy

01/13/17....Interview - Approved (80 days)

An i-551 stamp is proof of LPR (Legal Permanent Resident) status, so is a greencard.

 

This means she can't get one because she's not yet an LPR.

Yes, we have the Adavance Parole. It expires soon as well. Is there a need to get a I-551 stamp as a proof of status while awaiting GC interview?

She doesn't have a status, so there's nothing to show proof of.

I guess my question is - what is the status of a GC applicant whose K1 expired a while ago? What if a US immigration officer stops us tomorrow and asks for status? :(

She doesn't have any status, but she is under "authorized stay", meaning she is here legally. 

 

No US immigration officer will stop you and ask for her status, and if they would they could confirm with USCIS that she has a pending case. If you really want to you can also carry around a copy of the acceptance letter she received after she sent in her application
